Title: Confused on 90/180 policy

I'm going to be studying abroad in London for my spring semester and I want to backpack for as much of the summer as possible afterwards. If I get settled in London early January and soon after enter a Schengen country I know my 90 days in the 180 day period will start. So if I end my semester in May and start backpacking with maybe a week or two in Schengen days under my belt already from weekend trips, when the 180 day period I started in January ends in early June, will a new 180 day period start? Meaning I would be able to stay for another 90 days?

No, the 180 days period does not get reset. It moves every day forward by one day. See for example this thread for more details:
