I understand the 90/180 rule.  But how will the Schengen Area know when I actually leave their area?  If I stay for 150 days instead of 90 and decide to leave to the UK after that, aren't the only people I will run into going to be the UK border authorities worrying only about their country and not how long I've been in Schengen area?

All the eu countries are linked together through so called schengen information system, or SISII. One of the subsystems is called VIS, this system stores information about travelers. When you travel from a Schengen country to a non-schengen country by air, you go through border control. The VIS system also gets information from airline operators (do not forget that you need to present your ID when you check in at the airport).
