strict countries checking on 90 day Schengen rule for US citizens

Hi, my Honey and I have overstayed the 90 day rule in France regularly for 10 years and only once did I get caught by an immigration office while leaving through Zurich on day 98.  I am looking for any advice about which countries search your stamps with strict implementation and which are looser about it.

It does not depend on "countries" but on the "officers". Shengen countries implement the 90/180 rule. All Schengen countries must abide by this rule and enforce it. No Schengen country is oficially ignoring this rule. It is about people. Some strict border patrols look at the stamps and count the dates. Some lazy border partols just look at the photo and let you go.
